山添 煎茶

A harmonious and wonderfully fragrant spring green tea gently grown by natural farming methods without any use of pesticides or fertilising in the mountains surrounding Yamazoe village, next to the freshwater lake Nunome after which Mr and Mrs Kayashita named their tea.
The young Yabukita leaves were harvested on an early spring evening in May and then lightly wilted (ichō) indoors until the next morning, after which they were finally processed into sencha.
Subtle floral notes unfolds from this mild ichō oxidization step which, combined with a pronounced sense of sweetness and clean mountain minerality, result in a beautiful expression of the Kayashita family’s approach to cultivating and making tea: always careful, natural, and with distinct personality.
