Unshaded sencha grown by natural farming methods without any use of fertiliser or pesticides by Fumiaki Iwata and his team at Tsukigase Kenkō Chaen in Tsukigase, Nara.
The minimal intervention in the cultivation of the tea trees is complemented by a minimal degree of processing in the finished leaf – no shading before harvest and no hi-ire firing afterwards.
What remains is a very pure expression of the unique geography of the Tsukigase region: with fresh spring-green notes and a distinct minerality, a sip of Iwata-san’s Tsukigase Sencha is almost like taking a sip of the mountainous, mineral-rich landscape of his tea gardens itself.
