Unshaded sencha by Tokuya Yamazaki from a single garden in Kamo, Kyoto, harvested from old (+50 years) zairai tea trees growing in an almost wild environment – no fertilising, no pesticides, and almost no weeding (except for once in autumn).
The gently cultivated and carefully processed spring leaves offer a very natural – and today, very rare – expression of Japanese green tea.
The result is a pure and, on the surface, subtle tea, where green hints of spring are accompanied by warm sensations of minerality and a soft, yet characteristic natural sweetness – seemingly lingering without end, even after numerous infusions.
