Matcha Hekiun | Natural farming | 2018

抹茶 碧雲

Matcha from a single garden of Samidori tea trees in Kamo, Kyoto, grown by natural farming principles – no pesticides, no fertilising, and almost no weeding (except once in autumn).
Harvested by Tokuya Yamazaki in May 2018 and aged as tencha for +5 years before being gently ground into matcha on granite stone mills.
Warm sensations of soft earth are followed by sweet floral notes and a lingering marine finish, offering a uniquely summer forest-like and deeply soothing impression.

moss – wild flowers – kombu dashi
