Naturally farmed sencha from a single garden of old (+50 years) heirloom zairai tea trees harvested and produced by Tokuya Yamazaki on May 3rd 2024 in Kamo, Kyoto.
The unshaded and carefully processed spring leaves offer a very clean and natural expression reflecting Yamazaki-san’s farming principles of minimal intervention – no fertilising, no pesticides, and almost no weeding (except for once in autumn).
The result is a tea with only little umami, but instead clear sensations of minerality – a testament to the deep roots of the zairai trees – and a rich natural sweetness that lingers calmly as a fine aftertaste, with hints of green legumes and aromatic wood.
