Unshaded sencha from a single garden in Kamo, Kyoto, made from the classic Kyoto cultivar, Gokō.
The tea trees are cultivated by tea farmer Tokuya Yamazaki in an almost wild environment – without fertilizers, without pesticides, and almost without weeding (except for once a year in autumn) – resulting in a tea with an unusually pure and natural expression.
The Gokō cultivar is most commonly used for shaded teas such as matcha and gyokuro, but left unshaded and non-fertilised umami is present only in a subtle way.
Instead, the finely rolled spring leaves offer deep layers of aroma, texture, and a characteristic berry-like sweetness that slowly unfolds through repeated infusions.
