Honyama Tedzumi Sencha | Organic | 2024

本山 手摘み 煎茶

Hand-picked sencha from young shizen-jitate Saemidori tea trees growing with a view to Mount Fuji in Shizuoka’s traditional Honyama terroir at an altitude of approximately 600 meters above sea level.
The careful hand-picking (one bud, two leaves) of the early spring leaves results in an elegant and very smooth cup of tea delicately balancing mild sensations of warmth with a refreshingly marine, almost saline note.
The light asamushi steaming adds only a gentle touch of initial processing, causing subtle flavors and aromas to slowly emerge as the leaves gradually unfold – ideally enjoyed in small, concentrated portions.
