This year’s sencha from Mr and Mrs Kayashita once again offers a very harmonious and natural green tea, carefully grown by natural farmings methods in the mountains surrounding Yamazoe village, next to the freshwater lake Nunome after which the tea receives its name.
The young Sayamakaori leaves were harvested on an early spring evening in May and left to wilt gently until the following morning before being finished as sencha – a gentle degree of ichō oxidation which accentuates the delicate floral notes characteristic of the Sayamakaori cultivar.
Combined with a naturally lingering sweetness and refreshing sense of mountain minerality, this makes Yamazoe Nunome Sencha a beautiful expression of the Kayashita family’s approach to cultivating and making tea: always careful, natural, and with distinct personality.
