Yamazoe Kancha | Natural farming | 2023

山添 寒茶

Traditional but today rare kancha, or literally ‘cold tea’, made from thick winter leaves harvested and processed in late January at the time of the Japanese micro-season of 大寒 daikan, or ‘Great Cold’.
Following the harvest, the leaves are steamed outdoors over woodfire and subsequently dried in the cool winter wind . The result is a deeply body-warming tea with a unique botanical-medicinal character accompanied by subtle hints of smoke and a natural sweetness without any bitterness.
Due to the mature nature of the winter leaves, Yamazoe Kancha also has a very low caffeine content, making the tea suitable for anyone who would like a mild and gently calming cup of tea, for example in the evening.
