Spring-harvested kamairicha, gently cultivated according to natural farming methods by Mr. and Mrs. Kayashita in Yamazoe, Nara.
In contrast to most modern Japanese tea, the Kayashita family’s pan-fired leaves are always carefully preserved largely intact.
The result is an unusually pure and natural expression of Japanese green tea, which only slowly unfolds as the young spring leaves gradually unfurl.
Here, we find almost no sense of umami, but instead it is as if Yamazoe’s mountainous spring landscape itself is reflected within our cups – delicately accompanied by a rich natural sweetness and bright floral notes for which the Sayamakaori cultivar is particularly known.
