The tea trees growing in Tsukigase Kenkō Chaen’s naturally farmed tea gardens do not receive any fertilizer – apart from the annual distribution of fallen leaves and pampas grass from nearby forests – and therefore they grow slowly. Very slowly. In return, they shoot tea leaves that are intimately shaped by the very soil from which they grow and through which they receive nutrition single-handedly.
This year’s Tsukigase Sencha from Tsukigase Kenkō Chaen’s naturally farmed tea gardens thus offers a unique study in terroir. The minimum intervention principle guiding the tea farming method is complemented by a minimal processing of the individual tea leaf itself – no shade before harvest, no hi-ire roasting afterwads – and what remains is an unusually pure expression of the Tsukigase region’s unique geography: a sip of Tsukigase Sencha is almost like taking a sip of the mountainous landscapes of the tea gardens themselves.
