Tsukigase Sencha | Natural farming | 2024

月ヶ瀬 煎茶

Unshaded sencha grown by natural farming methods without any use of fertiliser or pesticides by Fumiaki Iwata and his team at Tsukigase Kenkō Chaen in Tsukigase, Nara.
The low intervention in farming is mirrored by a minimal processing of the finished leaf – no shade before harvest, no hi-ire firing after.
In the end, we are greeted by a pure expression of the pristine and uniquely mineral-rich topography characterizing the Tsukigase terroir: abounding in fresh spring vegetal notes and a clean minerality, a sip of Iwata-san’s naturally farmed Tsukigase Sencha is almost like taking a sip of his tea gardens’ mountainous landscape itself.
