Unshaded sencha made from the rare N-15 cultivar, selected from heirloom zairai seeds and cultivated by organic principles by tea farmer Katsumi Saitō himself deep in the traditional Honyama region of Shizuoka.
Lightly steamed (asamushi) and – as always with Saitō-san’s teas – further processed with the utmost of care, these delicate spring leaves present a uniquely herbaceous profile backed by refreshing hints of citrus and a mild umami in a very natural style.
