Wagashi master Manabu Shiraishi guests io on October 23rd – 24th 2023 and will hold a total of three workshops each based on a different form of seasonal wagashi – Momiji, Sasaguri and Ichō. In each workshop, Manabu Shiraishi will teach us the preparation method of an autumnal wagashi as well as serve wagashi freshly made by himself. Tea will also be served during the workshop.
Duration is approx. one and a half hours with a maximum of eight participants per workshop. The program is as follows:
October 23rd 2023
Workshop 1) 13:30 – 15:00 – Making Momiji (maple leaf)
Workshop 2) 17:00 – 18:30 – making Sasaguri (wild chestnut) (sold out)
October 24th 2023
Workshop 3) 10:30 – 12:00 – making Ichō (ginkgo leaf)
All workshops take place in io いほ at Blågårdsgade 15, 2200 Copenhagen. No prior knowledge of wagashi is required.
About Manabu Shiraishi | 白石学
Manabu Shiraishi originally trained in a traditional wagashi store in Sapporo, Hokkaido, after which he worked as a wagashi master in the acclaimed restaurant Jin in Ginza, Tokyo. After Jin, Shiraishi-san moved to work in New York and most recently Paris, where he today serves wagashi as head pâtissier at Chakaiseki Akiyoshi, while also preparing wagashi for other Paris-based Japanese restaurants as well as local tea ceremony groups.
