Wagashi master Manabu Shiraishi guests io on March 11th 2024 where he will be offering a wagashi workshop on the theme of early spring. During the workshop, Shiraishi-san will teach us how to make sakuramochi as well as serve a variation of sakuramochi freshly made by himself. Tea will also be served during the workshop.
The duration of the workshop is an hour and a half with a maximum of eight participants. No prior knowledge of wagashi is required. The workshop takes place in io いほ on Blågårdsgade 15, 2200 Copenhagen.
About Manabu Shiraishi | 白石学
Manabu Shiraishi originally trained as a traditional wagashi chef in Sapporo, Hokkaido, after which he worked as a wagashi master in the acclaimed restaurant Jin in Ginza, Tokyo. After Jin, Shiraishi-san moved to work in New York and most recently Paris, where he today serves wagashi as head pâtissier at Chakaiseki Akiyoshi, while also preparing wagashi for other Paris-based Japanese restaurants as well as local tea ceremony groups.
