Let’s practice together the art of making our own wagashi – Japan’s traditional and seasonal tea confection.
During this workshop, participants will be taught by wagashi master Manabu Shiraishi how to prepare sakuramochi, one of Japan’s classical forms of spring wagashi.
We will also be enjoying a freshly made wagashi by Shiraishi-san himself as the workshop concludes – together with a bowl of matcha.

Wagashi master Manabu Shiraishi guests io on March 11th 2024 where he will be offering a wagashi workshop on the theme of early spring. During the workshop, Shiraishi-san will teach us how to make sakuramochi as well as serve a variation of sakuramochi freshly made by himself. Tea will also be served during the workshop.

The duration of the workshop is an hour and a half with a maximum of eight participants. No prior knowledge of wagashi is required. The workshop takes place in io いほ on Blågårdsgade 15, 2200 Copenhagen.

About Manabu Shiraishi | 白石学

Manabu Shiraishi originally trained as a traditional wagashi chef in Sapporo, Hokkaido, after which he worked as a wagashi master in the acclaimed restaurant Jin in Ginza, Tokyo. After Jin, Shiraishi-san moved to work in New York and most recently Paris, where he today serves wagashi as head pâtissier at Chakaiseki Akiyoshi, while also preparing wagashi for other Paris-based Japanese restaurants as well as local tea ceremony groups.
