We celebrate the arrival of early spring as we gather in io for a unique and seasonal wagashi and tea service together with wagashi master Manabu Shiraishi.
Here, Shiraishi-san will present a total of three delicate wagashi servings which are freshly prepared in front of the participants, inspired by the yet-to-come Sakura scenery: sakura no wasanbon, sakuramochi, and sakura no kuzuyaki.
Each wagashi is paired with a specially selected Japanese tea, brewed and served by Yukiko from io.

After purchase, an order confirmation will be sent via email which serves as the ticket to the selected workshop. Please note that tickets are non-refundable if canceled less than five days before the event.

About Manabu Shiraishi | 白石学

Manabu Shiraishi originally trained as a traditional wagashi chef in Sapporo, Hokkaido, after which he worked as a wagashi master in the acclaimed restaurant Jin in Ginza, Tokyo. After Jin, Shiraishi-san moved to work in New York and most recently Paris, where he today serves wagashi as head pâtissier at Chakaiseki Akiyoshi, while also preparing wagashi for other Paris-based Japanese restaurants as well as local tea ceremony groups.
