Yamazoe Kancha | Natural farming | 2025

山添 寒茶

Traditional but today rare 寒茶 kancha or, literally, ‘Cold Tea’. Made from thick winter leaves harvested and processed in late January at the time of the Japanese micro-season 大寒 daikan, or ‘Great Cold’, which traditionally marks the peak of winter.
Following harvest, the leaves are steamed outdoors over woodfire and subsequently dried in the cool winter wind. The result is a deeply body-warming tea with a unique botanical-medicinal character accompanied by subtle hints of smoke and a long-lasting natural sweetness without any bitterness.
Due to the mature nature of the winter leaves, Yamazoe Kancha also contains very low amounts of caffeine, making it suitable for anyone looking for a mild and gently calming cup of tea.
