本山 煎茶 N-15

Unshaded sencha made from the rare N-15 cultivar, selected from heirloom zairai seeds by tea farmer Katsumi Saitō himself deep in the traditional Honyama region of Shizuoka.
Lightly steamed (asamushi) and – as always with Saitō-san’s teas – further processed with the utmost of care, these fine spring leaves offer a uniquely aromatic profile with complex notes of citrus fruit and fresh herbs.
Finely balanced sensations of umami are also present, gradually emerging across subsequent infusions and lingering as a deep aftertaste in a very natural style.
Harvested on May 1st 2025 during hachijūhachiya, an auspicious time for harvesting spring tea – eighty-eight nights after risshun, the first day of spring according to the traditional lunar calendar of Japan.
