Made from thick winter leaves harvested and processed in late January at the time of the Japanese micro-season <span lang=\"ja\">\u5927\u5bd2<\/span> <em>daikan,<\/em> or \u2018Great Cold\u2019, which traditionally marks the peak of winter. <\/h5>\n<h5>Following harvest, the leaves are steamed outdoors over woodfire and subsequently dried in the cool winter wind.
