Their K\u014dcha of pure, naturally farmed Sayamamidori &#8211; one of Japan&#8217;s earliest registered cultivars quite rarely seen in use today &#8211; is among the most exquisite Japanese black tea productions that we in io have had the pleasure to brew.<\/p>\n<p>The tea leaves of Tsukigase K\u014dcha Sayamamidori come from the first spring harvest in May 2020, and they clearly convey careful subsequent processing. As the tea leaves gradually unfold during brewing, one begins to notice their well-preserved natural shape as well as the fine-tuned and uniform degree of oxidation obtained after 12-14 hours of gentle indoor <em>ich\u014d<\/em> drying.<\/p>\n<p>The result is an elegant and finely balanced Japanese black tea rich in sweet notes reminiscent of stone fruit and cedar woods with a hint of malt.
