Here we are quite far from typical modern Sencha parameters such as umami, seaweedy, and grassy notes. Instead, expect prominent vegetal sensations and a distinct minerality characteristic of Tsukigase Kenkō Chaen’s teas. The Sencha leaves have been allowed to grow completely uncovered, preserving a certain astringent edge to them, and they thus brew a refreshingly aromatic and vibrant green-yellowish tea with a very clean taste profile. Suitably also for experiments with higher brewing temperatures and brief steeping times.
