Aromatic and highly mineral medium-steamed (chūmushi) organic Sencha from the first harvest of the year in May 2021 grown and produced by Tsukigase Kenkō Chaen in Tsukigase, Nara.

Here we are quite far from typical modern Sencha parameters such as umami, seaweedy, and grassy notes. Instead, expect prominent vegetal sensations and a distinct minerality characteristic of Tsukigase Kenkō Chaen’s teas.

The finely processed Sencha leaves have been allowed to grow 100% unshaded until spring harvest in May 2021 and brew a clear and aromatic yellow-green tea. The rich amount of sun results in naturally high concentrations of catechins adding a certain edge of astringency which gradually transforms into a light sweet finish.

Tsukigase Sencha is also suitable for experiments with higher water temperatures (+ 90 ° C) and shorter infusion times (3 ~ 5 sec) whereby the aromatic and astringent qualities of the leaves may be accentuated.
