Okumidori is an elegant varietal of the tea tree known to be particularly suitable for shaded growth (kabuse). With Kamo Kabusecha from the May 2021 harvest, Tokuya Yamazaki has crafted an unusually beautiful and natural example hereof. You will find clear sensations of umami and delicate sweetness that one would expect from a shade-grown tea – in this case shaded via direct covering for fifteen days before harvest. As a tea cultivated by natural farming methods – grown completely without any use of pesticides and fertilizers – Kamo Kabusecha is at the same time intimately shaped by both its terroir and Mr Yamazaki’s unique approach to tea production. The finely processed tea leaves slowly unfold and brew a mild yet intricate green tea rich in detail which gradually opens up and transforms across numerous infusions.
